Bread Machine – Cranberry Banana Yeast Bread

This bread machine banana yeast bread recipe makes an excellent sandwich bread. The cranberries make me think of Thanksgiving dinner whenever I eat this bread. It works especially well as a bread for turkey sandwiches. Yum!

Since cranberry banana bread is a delicious semi-sweet bread, it is also great as a breakfast bread. My non-sandwich loving wife begs for this bread… because she likes it for breakfast with jam. She also likes to pick off the cranberries before the bread even cools!

Cranberry banana bread is a real bread because it uses yeast. It is not like a typical banana “bread” which is more like a cake and is made with baking soda/baking powder. This cranberry banana bread is designed to be used for delicious sandwiches and it is not a typical dessert-like banana “bread”. This bread has just a hint of banana flavor and this nicely complements the cranberry taste.

Bread Machine – Banana Yeast Bread – Ingredients  for 2 lb Loaf

  • 1 1/3 Cups – Milk
  • 4 Tablespoons – Butter
  • 3 Cups – Flour
  • 1 Cup – Oatmeal
  • 1 Teaspoon – Salt
  • 1/3 Cup – Brown Sugar
  • 2 Teaspoons – Bread Machine Yeast
  • 1 – Sliced Banana
  • 6 Tablespoons – Dried Cranberries

Bread Machine – Banana Yeast Bread – Instructions

  • Bread Machine settings – 2 pound loaf, light color and “basic” bread
  • Add all ingredients starting with the milk into the bread machine “bucket” (loaf pan).
  • Start the machine going after checking the settings.
  • When the bread machine has finished baking the bread, you should remove the bread and place it on a cooling rack. Use oven mitts when removing the bread machine container (bread loaf pan) as it will be very hot!
  • After removing the bread, don’t forget to remove the mixing paddle if it is stuck in the bread. Use oven mitts as the mixing paddle will be very hot coming out of the bread machine. Or wait until the bread is completely cooled and then remove the mixing paddle.
  • In our Sunbeam bread machine, the baking takes about 3 hours for a 2 pound bread at the light color & basic bread settings. However, some machines can differ and you don’t want to be away from home when the bread machine “finished” alarm goes off! Your bread machine should show you the length of the baking time after you have entered the settings into the machine. This will allow you to know when to be in the kitchen in order to remove the bread.
  • Before using your bread machine, you should read the bread machine manufacturer’s  instructions in order to use the bread machine effectively and safely.

  • I like add some oatmeal to this recipe in order to add fiber & texture to the bread. For the cranberry banana bread recipe recipe, I used One Minute Oatmeal from Quaker. Nevertheless, store oatmeal brands would probably work equally well.
  • You might need to add a little more flour (if the mix is too wet) or milk (if the mix is too dry) in the beginning because the varying size of bananas can throw off this recipe a tiny bit.
  • For the dried cranberries, I used 3 small Craisin boxes stolen from the kids’ lunches. Shh.. Don’t tell them!
