Curried Chickpea Salad Sandwich

Here is a wonderful curried chickpea salad sandwich recipe. This simple & easy-to-make recipe creates a great tasting and slightly exotic sandwich. Chickpea sandwiches are also a nice vegetarian alternative to deli meat sandwiches. This delicious sandwich is based on our curried chickpea salad recipe. This sandwich recipe works well with our bread machine raisin bread (that uses golden raisins).

What is a chickpea?

A chickpea is a legume that has been cultivated for over 10,000 years. It is a key ingredient in many Indian and Middle Eastern dishes. Chickpeas are rich in protein, fiber, folate and minerals. In America, chickpeas are also called garbanzo beans.

Ingredients – Curried Chickpea Salad Sandwich Recipe

Salad Ingredients

  • 1 Can – Chickpeas – Use one large 29 oz can or two small 15 oz cans
  • 8 Tablespoons – Mayonnaise – Adjust to meet your family’s tastes. My family likes creamier chickpea salads.
  • 1/4 Cup – Onion (Chopped)
  • 1/4 Cup – Celery (Chopped)
  • 1/8 Cup – Cilantro (Chopped)
  • 1/2 Teaspoon – Curry Powder

Sandwich Ingredients

  • 4 Leaves – Lettuce – Optional
  • 2 Slices – Your Favorite Bread (i.e. Oatmeal bread)

Instructions – Curried Chickpea Sandwich Recipe

  • Wash the chickpeas in a strainer.
  • Mash 1/2 of canned chickpeas.
  • Pour the whole chickpeas and mashed chickpeas in a large bowl.
  • Chop the onion into small chunks and add to the large bowl.
  • Chop up the cilantro and add to the large bowl.
  • Chop up the celery and add to the large bowl.
  • Stir curry powder and mayonnaise together in a separate bowl and then add to the large bowl of ingredients.
  • Stir all ingredients together.
  • Optional – Place in refrigerator to chill for a couple of hours.
  • Scoop out several heaping tablespoons of the curried chickpea salad. Place salad between two bread slices.
  • Optional – Add 3-4 leaves of lettuce on top of the salad if you want a crunchier sandwich.
  • Alternative – Instead of sandwich bread, you can place the chickpea salad in a tortilla wrap. Create a curried chickpea burrito!
  • Eat and enjoy!!!
