Curried Chickpea Salad Recipe

Here is a very simple curried chickpea salad recipe. This easy-to-make recipe creates a great tasting and slightly exotic salad. Chickpea salads are a wonderful vegetarian side dish.

You can also use this salad recipe to create a delicious curried chickpea salad sandwich. What is a chickpea?

A chickpea is a legume that has been cultivated for over 10,000 years. It is a key ingredient in many Indian and Middle Eastern dishes. Chickpeas are rich in protein, fiber, folate and minerals. In America, chickpeas are also called garbanzo beans.

Wash the Chickpeas

Ingredients – Curried Chickpea Salad Recipe

  • 1 Can – Chickpeas – Use one large 29 oz can or two small 15 oz cans.
  • 8 Tablespoons – Mayonnaise – Adjust to meet your family’s tastes. My family likes creamier chickpea salads.
  • 1/4 Cup – Onion (Chopped)
  • 1/4 Cup – Celery (Chopped)
  • 1/8 Cup – Cilantro (Chopped)
  • 1/2 Teaspoon – Curry Powder
  • Optional – Throw in some raisins or dried cranberries in order to add a little sweetness to this salad.
  • Optional – If you want to reduce the fat in this curried chickpea salad recipe, you can use low-fat mayonnaise or yogurt.

Instructions – Curried Chickpea Salad Recipe

  • Wash the chickpeas in a strainer.
  • Mash 1/2 of canned chickpeas.
  • Pour the whole chickpeas and mashed chickpeas in a large bowl.
  • Chop the onion into small chunks and add to the large bowl.
  • Chop up the cilantro and add to the large bowl.
  • Chop up the celery and add to the large bowl.
  • Stir curry powder and mayonnaise together in a separate bowl and then add to the large bowl of ingredients.
  • Stir all ingredients together.
  • Optional – Place in refrigerator to chill for a couple of hours. We find this salad tastes better when it has a little time to “marinate”.
  • Eat and enjoy!!!
