1CupPumpkin Puree- NOT canned pumpkin pie mix - 1 cup is approximately 8 ounces of puree (not a full 15 ounce pumpkin puree can)
2Eggs(large)
8TablespoonsUnsalted Butter(sliced & softened) - Or you can use 1/2 cup of a neutral-flavored vegetable oil (i.e. canola oil or corn oil). See the tips section for more information.
2CupsAll Purpose Flour
1/2CupWhite Granulated Sugar
1/2CupLight Brown Sugar(packed)
1TeaspoonVanilla Extract
1TeaspoonBaking Soda
1TeaspoonBaking Powder
1/2TeaspoonSalt
1TeaspoonCinnamon- Or you can add 2 teaspoons of your favorite pumpkin pie spice mix if you want more of a pumpkin pie flavor (versus mild cinnamon taste).
Instructions
Bread Machine Settings – Sweet Quick Bread/Cake, Light Color
Lightly beat the eggs.
Soften the butter in a microwave.
Unplug the bread machine and remove the bread pan.
Add the pumpkin puree, eggs & butter (or oil) into the bread pan and then add the dry ingredients. Be aware that the bread pan should be removed from the bread machine before you start to add any ingredients. This helps to avoid spilling any material inside the bread machine. The bread machine should always be unplugged when removing the bread pan.
Put the bread pan (with all of the ingredients) back into the bread machine, close the bread machine lid and then plug in the bread machine.
Enter the bread machine settings (Sweet Quick Bread/Cake Light Color) and press the start button. FYI - Before making this recipe, please read the tips section below for more information regarding the sweet quick bread/cake setting used to make pumpkin breads. The setting may be called "quick bread", "quick bread/cake", "cake", etc. However, some manufacturers use the "quick bread" setting are for rapid sandwich-type breads that use yeast (and not for quick breads such as pumpkin bread that use baking powder/soda). Therefore, this setting can be very confusing... but the tips section below will help you to find the right setting to use on your machine. You need to enter the correct pumpkin bread setting used by your SPECIFIC bread machine model or the pumpkin bread could be under or overcooked.
When the bread machine has finished baking the bread, unplug the bread machine, remove the bread pan and place it on a wooden cutting board. Let the pumpkin bread stay within the bread pan (bread loaf container) for 10 minutes before you remove it from the bread pan. Use oven mitts when removing the bread pan because it will be very hot!
Optional - Use a long wooden skewer to test if the pumpkin bread is completely cooked. Wear oven mitts as the bread pan will be hot. See the tips section for more details.
After the 10 minute "cooldown", you should remove the pumpkin bread from the bread pan and place the pumpkin bread on a wire cooling rack to finish cooling. Use oven mitts when removing the bread.
Don’t forget to remove the mixing paddle if it is stuck in the bread. Use oven mitts as the mixing paddle could be hot.
You should allow the pumpkin bread to completely cool before cutting. This can take up to 2 hours. Otherwise, the pumpkin bread will break (crumble) more easily when cut.
