Tips To Prevent A Dry Banana Bread – These tips also apply to other “quick breads” such as pumpkin bread and zucchini bread.
- Use RIPE bananas. Ripe bananas have more natural sugars & less starch than unripe bananas. These sugars are hygroscopic (which means they attract and hold onto moisture).
- Try using vegetable oil instead of butter. Butter is a classic ingredient for banana bread because it adds flavor. However, butter can also make banana bread taste a little drier than those made with vegetable oil. Why? Butter is usually a solid at normal room temperatures whereas vegetable oil is a liquid. Because the oil is a liquid, the banana bread feels moister.
- Measure the ingredients correctly. For example, do not add too much flour or you could end up with a dry banana bread (as the extra flour can throw off the liquid-to-dry ingredient ratio of the recipe). Make sure to use leveled cups of flour (e.g. no flour mountains in your measuring cup). Or use a kitchen scale to weigh the flour.
- Accurately measure the mashed bananas. Use a measuring cup or kitchen scale. Don’t use a number of bananas (e.g. 3 bananas) to make banana bread. Bananas vary in size. If the bananas are too small then your banana bread could come out dry.
- Add some brown sugar. Brown sugar contains molasses and molasses is more hygroscopic (retains moisture) than white granulated sugar. According to Wikipedia’s article on the baking phenomenon known as hygroscopy, “Different varieties of sugars are used in different quantities to produce a crunchy, crisp cookie (British English: biscuit) versus a soft, chewy cake. Sugars such as honey, brown sugar, and molasses are examples of sweeteners used to create moister and chewier cakes.”
- Do not totally eliminate the sugar or fat in a banana bread recipe. These ingredients help to retain moisture and create a more tender texture. Moreover, many artificial sweeteners do not have the same moisture retaining property as natural sugars. As a result, replacing sugar with alternative sweeteners can lead to a drier banana bread.
- Do not use untested ingredient substitutes. Some ingredient substitutes require extra moisture. Otherwise, your banana bread could come too dry. For example, whole wheat flour requires more moisture than all purpose flour. Follow the recipe instructions & tips or look for a proven recipe that includes the ingredients that you want to use.
- Do not overmix the batter. Overmixing creates excess gluten development and this can result in a drier, denser and/or gummier banana bread.
- Do not overbake. If you bake banana bread for too long, it will turn out dry. I like to use a digital bread thermometer to test the internal temperature of my banana bread to see if it has been fully baked. FYI – It is better to test the internal temperature of the banana bread a little too early versus a little too late. I also use a hanging oven thermometer to make sure my oven is not too hot (or cold). Some ovens run 25+ degrees hotter than the temp set on the dial.
- Place the banana bread in the center of your oven. Don’t place your banana bread next to the oven’s heating element. This can cause the banana bread to bake too fast and/or over brown the top crust.
- Use the exact bread pan called for in a recipe. Different shaped/sized pans or ones made with a different material (e.g. glass versus metal) can cause banana bread to bake too fast.
- Not properly wrapping the banana bread if you are freezing it for long term storage. The freezer can dry out banana bread and cause freezer burns.
