Bread Machine Cranberry Raisin Bread

This bread machine cranberry raisin bread recipe produces a semi-sweet homemade bread that can be used for breakfast or as a tasty sandwich bread. It is also an attractive bread because the yellow color of the golden raisins contrasts nicely with the darker cranberries.

Since this raisin bread recipe is done in a bread machine, it is simple & easy to make. Dried Cranberries for Bread Machine Bread

Ingredients – Bread Machine Cranberry Raisin Bread Recipe

  • 1 1/2 Cups – Water (warm)
  • 4 Tablespoons – Unsalted Butter (sliced & softened)
  • 3 Cups – Bread Flour
  • 1 Cup – Old Fashioned Oatmeal (not instant oatmeal)
  • 1/3 Cup – Light Brown Sugar
  • 1 1/2 Teaspoons – Salt
  • 1 1/2 Teaspoons – Bread Machine Yeast
  • 4 Tablespoons – Dried Cranberries
  • 4 Tablespoons – Golden Raisins

Servings – Roughly 12 slices

Equipment –  Measuring cup & spoons, flexible spatula, oven mitts, cooling rack… and of course, a bread machine!

Instructions – Bread Machine Cranberry Raisin Bread Recipe

  • Bread machine settings – 2 pound loaf, light color and “basic” bread setting.
  • Unplug the bread machine and remove the bread pan from the bread machine. This prevents any ingredients added to the bread pan from accidentally spilling into the bread machine.
  • Starting with the water, you should add all of the ingredients (except the cranberries & golden raisins) into the bread machine “bucket” (bread pan).
  • Place the bread pan back into the bread machine and plug in the bread machine.
  • Enter the correct settings into the bread machine (i.e. 2 pound, light color and basic) and press the start button.
  • After the bread machine has finished its first kneading cycle (and before it has started the second kneading cycle), add the cranberries and golden raisins.
  • When the bread machine has finished baking the bread, unplug the bread machine. Remove the bread and place it on a cooling rack. Use oven mitts when removing the bread machine container (bread loaf pan) as it will be very hot!
  • After removing the bread, don’t forget to remove the mixing paddle if it is stuck in the bread. Use oven mitts as the mixing paddle will be very hot coming out of the bread machine. Or wait until the bread is completely cooled and then remove the mixing paddle.
  • In our Sunbeam bread machine, the baking takes about 3 hours for a 2 pound bread at the light color & basic bread settings. However, some machines can differ and you don’t want to be away from home when the bread machine “finished” alarm goes off! Your bread machine should show you the length of the baking time after you have entered the settings into the machine. This will allow you to know when to be in the kitchen in order to remove the bread.
  • Before using your bread machine, you should read the bread machine manufacturer’s  instructions in order to use the bread machine effectively and safely.

Tips – Bread Machine Cranberry Raisin Bread Recipe

  • The tips below are designed to help bread machine “novices” and/or people with limited baking experience.
  • If you would like make a breakfast bread with golden raisins, you might also like to try our Bread Machine Cinnamon Raisin Bread Recipe. Or if you like nuts, you should try our Bread Machine Cranberry Nut Bread (made with dried cranberries & chopped walnuts).
  • If you would like to make the dough in your bread machine but bake it in your oven, you should read our Cranberry Walnut Bread recipe. Just replace the chopped walnuts in that recipe with raisins if you want to make an oven-baked cranberry raisin bread.
  • Some bakers like to make a little dent in the flour in order to hold the yeast in place (looks sort of like a yeast crater in the top of a flour volcano). This prevents the yeast from mixing with the other ingredients until the bread machine is turned on. Of course, you should not place the salt in this “crater” or it could kill the yeast.
  • Optional – If you do not have dried cranberries or golden raisins, you can always replace them with “regular” raisins, dried blueberries, dried cherries, etc.

  • If you have a problem with a “basic” bread machine recipe, please make sure that you are following the recipe exactly (i.e. using the correct bread machine settings), using the correct amount of an ingredient (i.e. don’t eyeball the measurements versus using a measurement cup or accidentally add a tablespoon when a teaspoon is called for), using the correct ingredients (i.e. bread machine yeast versus regular yeast or bread flour versus all purpose flour), etc. Please don’t “wing” things with recipes.
  • If you start substituting ingredients (i.e. different types of flour), you are experimenting and should not expect similar results to the recipe shown above. Experimenting can be fun. However, you should expect some successes but more potential disappointments when you start to experiment with recipes. For example, if you substitute whole wheat flour for bread flour, you will probably experience a problem (as whole wheat flour doesn’t rise nearly as well as bread flour). Moreover, whole wheat flour has a totally different flavor.
  • Be aware that some bread recipes may differ slightly between different types of bread machines & bread makers. Therefore, please read your bread machine manufacturer’s  instructions for basic bread recipes (i.e. white bread or whole wheat bread) as these are more likely to work on your individual bread machine.
  • If you haven’t used your bread machine or bread maker in a long time, please buy some new bread machine yeast before making your bread. Old yeast can die or lose its potency and this will lead to bread that does not rise properly. Bread machine yeast may not be viable if it has been sitting in your pantry for years.

  • Always wear oven mitts/gloves when dealing with a bread machine. The bread pan and the rest of the bread machine can get very hot during the baking process. This means that the bread pan and bread machine is likely to be very hot when you attempt to remove a baked good from the bread machine and/or bread pan.

So what I did was let the dough cool for a bit after the dough cycle, but before it started rising again was sectioned it into 8 pieces. I gently kneaded in a handful of chocolate chips into the individual pieces. I shaped my pieces into bagels. I was sure to fold in the chocolate chips so none of them were or exposed on the surface of the dough. I then boiled and baked each bagel. They came out perfect. Chocolate chips held up just fine. The bagels tasted great. I ate one immediately after they had baked, and then contemplated eating the whole batch. They were the perfect chewy consistency I was hoping for in a bagel.“

Please visit the comments section on the recipe page for more of her comment. – “I always use the proof funtion in winter as well as summer. This gives you a constant temp when proofing. Also, most of the time I will lay a piece of foil lightly over the loaf halfway through the baking process. This prevents over browning of the loaf. This happens because your loaf is in a more confined oven and closer to the heating elements.. I also bake in CI, Romatopf, bread bowls, all works. As long as it fits you can use it to bake in. I used an Italian bread pan to bake the Italian loaves.“
