Bread Machine Cranberry Raisin Bread

This bread machine cranberry raisin bread recipe produces a semi-sweet homemade bread that can be used for breakfast or as a tasty sandwich bread. It is also an attractive bread because the yellow color of the golden raisins contrasts nicely with the darker cranberries. Cranberry raisin bread is a tasty way to secretly add some fruit into your family’s lunches. In addition, you are sneaking in healthy oatmeal fiber too!

Cranberry & Raisin Bread – A Delicious Breakfast Bread!

Key Ingredient – Dried Cranberries

Dried Cranberries for Bread Machine Bread Ingredients – Bread Machine Cranberry Raisin Bread Recipe
  • 1 1/2 Cups – Water (warm)
  • 4 Tablespoons – Unsalted Butter (sliced & softened)
  • 3 Cups – Bread Flour
  • 1 Cup – Old Fashioned Oatmeal (not instant oatmeal) – DRY flakes
  • 1/3 Cup – Light Brown Sugar
  • 1 1/2 Teaspoons – Salt
  • 1 1/2 Teaspoons – Bread Machine Yeast
  • 4 Tablespoons – Dried Cranberries
  • 4 Tablespoons – Golden Raisins
Servings – Roughly 12 slices Equipment –  Measuring cup & spoons, flexible spatula, oven mitts, cooling rack… and of course, a bread machine!

2nd Key Ingredient – Golden Raisins

Golden Raisins for Bread Machine Bread Instructions – Bread Machine Cranberry Raisin Bread Recipe
  • Bread machine settings – 2 pound loaf, light color and “basic” bread setting.
  • Unplug the bread machine and remove the bread pan from the bread machine. This prevents any ingredients added to the bread pan from accidentally spilling into the bread machine.
  • Starting with the water, you should add all of the ingredients (except the cranberries & golden raisins) into the bread machine “bucket” (bread pan).
  • Place the bread pan back into the bread machine and plug in the bread machine.
  • Enter the correct settings into the bread machine (i.e. 2 pound, light color and basic) and press the start button.
  • After the bread machine has finished its first kneading cycle (and before it has started the second kneading cycle), add the cranberries and golden raisins.
  • When the bread machine has finished baking the bread, unplug the bread machine. Remove the bread and place it on a cooling rack. Use oven mitts when removing the bread machine container (bread loaf pan) as it will be very hot!
  • After removing the bread, don’t forget to remove the mixing paddle if it is stuck in the bread. Use oven mitts as the mixing paddle will be very hot coming out of the bread machine. Or wait until the bread is completely cooled and then remove the mixing paddle.
  • In our Sunbeam bread machine, the baking takes about 3 hours for a 2 pound bread at the light color & basic bread settings. However, some machines can differ and you don’t want to be away from home when the bread machine “finished” alarm goes off! Your bread machine should show you the length of the baking time after you have entered the settings into the machine. This will allow you to know when to be in the kitchen in order to remove the bread.
  • Before using your bread machine, you should read the bread machine manufacturer’s  instructions in order to use the bread machine effectively and safely.
  • Please read the tips section below for extra information on how to make this recipe successfully & to avoid common bread machine problems.

Tips – Bread Machine Cranberry Raisin Bread Recipe
  • The tips below are designed to help bread machine “novices” and/or people with limited baking experience.
  • This recipe is part of Bread Dad’s series on easy Bread Machine Recipes.
  • If you would like make a breakfast bread with golden raisins, you might also like to try our Bread Machine Cinnamon Raisin Bread Recipe. Or if you like nuts, you should try our Bread Machine Cranberry Nut Bread (made with dried cranberries & chopped walnuts).
  • If you would like to make the dough in your bread machine but bake it in your oven, you should read our Cranberry Walnut Bread recipe. Just replace the chopped walnuts in that recipe with raisins if you want to make an oven-baked cranberry raisin bread.
  • Some bakers like to make a little dent in the flour in order to hold the yeast in place (looks sort of like a yeast crater in the top of a flour volcano). This prevents the yeast from mixing with the other ingredients until the bread machine is turned on. Of course, you should not place the salt in this “crater” or it could kill the yeast.
  • You need to use DRY oatmeal when making this recipe. Do not premoisten the oatmeal or the bread will come out soggy & underbaked.
  • Optional – If you do not have dried cranberries or golden raisins, you can always replace them with “regular” raisins, dried blueberries, dried cherries, etc.
  • If you like cranberry-based desserts & snacks, you should also try our recipes for Applesauce Cranberry Bread, Cranberry Banana Bread, Cranberry Bread with Dried Cranberries,  Cranberry Bread with Fresh Cranberries and Pumpkin Cranberry Bread.
  • If you have a problem with a “basic” bread machine recipe, please make sure that you are following the recipe exactly (i.e. using the correct bread machine settings), using the correct amount of an ingredient (i.e. don’t eyeball the measurements versus using a measurement cup or accidentally add a tablespoon when a teaspoon is called for), using the correct ingredients (i.e. bread machine yeast versus regular yeast or bread flour versus all purpose flour), etc. Please don’t “wing” things with recipes.
  • If you start substituting ingredients (i.e. different types of flour), you are experimenting and should not expect similar results to the recipe shown above. Experimenting can be fun. However, you should expect some successes but more potential disappointments when you start to experiment with recipes. For example, if you substitute whole wheat flour for bread flour, you will probably experience a problem (as whole wheat flour doesn’t rise nearly as well as bread flour). Moreover, whole wheat flour has a totally different flavor.
  • Be aware that some bread recipes may differ slightly between different types of bread machines & bread makers. Therefore, please read your bread machine manufacturer’s  instructions for basic bread recipes (i.e. white bread or whole wheat bread) as these are more likely to work on your individual bread machine.
  • If you haven’t used your bread machine or bread maker in a long time, please buy some new bread machine yeast before making your bread. Old yeast can die or lose its potency and this will lead to bread that does not rise properly. Bread machine yeast may not be viable if it has been sitting in your pantry for years.
  • Always wear oven mitts/gloves when dealing with a bread machine. The bread pan and the rest of the bread machine can get very hot during the baking process. This means that the bread pan and bread machine is likely to be very hot when you attempt to remove a baked good from the bread machine and/or bread pan.

I want to thank EVERYONE who leaves a comment in our recipe comment sections!! Beginners learn a lot from your tips & recipe variations. Below are some of our recent noteworthy visitor comments.

  • Susanne posted a very nice note about my Bread Machine Raisin Bread and many of my other bread machine recipes – “The raisin bread is outstanding! I’ve made it so many times I no longer have to follow the recipe. All of the Bread Dad recipes I’ve tried have come out perfect and delicious. It’s so nice to not have to experiment with other online recipes—I just go to the Bread Dad site & choose a new variety~~I know it will be great. I’ve made 16 different breads so far & have not been disappointed. Thank you Bread Dad—your instructions & hints are the BEST!“
  • Trisha left a great tip on how to convert my Bread Machine French Bread into a softer Italian bread – “Bread dad single handedly taught me how to use a bread machine to make the most delicious breads! His recipes are always the go-to in our household This French bread recipe definitely gets the most use, though! It has a perfect crumby crust and hard bottom, and if you want it to be a little softer (more like an Italian loaf vs the French loaf) all you have to do is add a small amount of fat (oil, butter, coconut oil, etc) making it a perfect recipe for basically any bread need.“
  • Heather left some amazing details on how to make “cinnamon crunch” bagels & “no boil” bagels in the comment section of my Bread Machine Bagels recipes. Read Heather’s whole comment for extra information – “If anyone wants to try it, I make my bagels into cinnamon crunch bagels by melting some butter, dipping the top into the butter and then dipping the top into a bowl of cinnamon sugar. Then I put it into the oven at 400 for 8 minutes. Take it out immediately and give it at least 5 minutes to cool, unless you want to deal with molten sugar in your mouth.“
  • Janette left me a super nice comment about my buttery Bread Machine White Bread & bread machine recipes – “Love this recipe. Actually, love all the bread dad recipes. I have used this bread for toast, sandwiches, and just bread and butter. Most of the bread dad recipes I use, just go through the dough cycle and then you do the rest…which I love, but this one is soooooo very easy. I seem to be making it every other day. Thanks, Bread Dad! Keep up the great work bringing us fabulous recipes for our bread machines.“
  • Martha converted my Bread Machine Breadstick Recipe into some awesome cheesy breadsticks – “These are quick & easy to make, and they’re a great way to class up any meal from a simple soup & salad to a full on gourmet meal. I just took a batch out of the oven for tonight. This time I split the dough into 16 equal pieces and rolled them into slightly flattened balls, brushed with the EVOO & sprinkled with freshly grated parm. Outstanding! As good, if not better than any artisan bread you may find in the breadbasket at a nice restaurant.“
