Cranberry Chicken Salad Sandwich Recipe – Ingredients
- 1 1/2 Cups – Cooked Chicken Breast (Diced) – The chicken should be cold.
- 1/2 Cup – Celery (Sliced)
- 2 Tablespoons – Dried Cranberries
- 1/2 Cup – Mayonnaise
- 1/4 Teaspoon – Salt (optional)
- 1/4 Teaspoon – Black Pepper (optional)
FYI – The chicken salad listed above can generally be used with 8 slices of your favorite homemade bread to create 4 chicken salad sandwiches.

- Prep Time – 10 minutes
- Cook Time – 10 minutes
- Use pre-cooked chicken breast. FYI – The cooked chicken should be cold (at refrigerator-level temperatures). The chicken should not be warm.
- Dice the cooked chicken into small chunks.
- Wash the celery.
- Slice the celery into small bits.
- Add the chicken, celery and cranberries into a large mixing bowl.
- Add the salt and black pepper.
- Mix in the mayonnaise with other ingredients.
- Spread the resulting chicken salad onto your favorite homemade bread to make a great sandwich!

- Optional – If you want things even crunchier, you can add some iceberg-type lettuce to your sandwich.
