Tips – Cranberry Chicken Salad Sandwich
- Instead of cooking some chicken breast at home, you can also use some store bought oven-roasted chicken or turkey.
- Don’t add hot (just cooked) chicken to the salad as it disrupts the mayonnaise. You want the cooked chicken to be chilled (refrigerator temperature) when making the chicken salad.
- Add more mayonnaise to this recipe if you want a “creamier” (mayo-ier?) chicken salad.
- If you want things even crunchier, you can add some iceberg-type lettuce to your sandwich.
- Use your favorite homemade bread to make this sandwich. Chicken salad tastes great on white bread, whole wheat bread, multigrain bread, cranberry walnut bread, French bread, etc.
