Cranberry Chicken Salad Sandwich Recipe

This cranberry chicken salad sandwich recipe is a simple & delicious lunch that you can make for your family. It is very easy to make and takes only a few minutes to prepare. This recipe only uses chicken, celery, dried cranberries, mayonnaise and a little salt & pepper. Your family will love it.

We often use this chicken salad recipe as the main ingredient for our lunchtime sandwiches. Chicken salad sandwiches taste great with many different kinds of homemade breads such as oatmeal bread, French bread, whole wheat bread, etc.

Cranberry Chicken Salad Sandwich Recipe – Ingredients

  • 1 1/2 Cups – Cooked Chicken Breast (Diced) – The chicken should be cold.
  • 1/2 Cup – Celery (Sliced)
  • 2 Tablespoons – Dried Cranberries
  • 1/2 Cup – Mayonnaise
  • 1/4 Teaspoon – Salt (optional)
  • 1/4 Teaspoon – Black Pepper (optional)

FYI – The chicken salad listed above can generally be used with 8 slices of your favorite homemade bread to create 4 chicken salad sandwiches.

Cranberry Chicken Salad Sandwich Recipe – Instructions

  • Prep Time – 10 minutes
  • Cook Time – 10 minutes
  • Use pre-cooked chicken breast. FYI – The cooked chicken should be cold (at refrigerator-level temperatures). The chicken should not be warm.
  • Dice the cooked chicken into small chunks.
  • Wash the celery.
  • Slice the celery into small bits.
  • Add the chicken, celery and cranberries into a large mixing bowl.
  • Add the salt and black pepper.
  • Mix in the mayonnaise with other ingredients.
  • Spread the resulting chicken salad onto your favorite homemade bread to make a great sandwich!

Tips – Cranberry Chicken Salad Sandwich

  • Add more mayonnaise to this recipe if you want a “creamier” chicken salad.
  • Optional – Instead of cooking some chicken breast at home, you can also use some store bought oven-roasted chicken or turkey.
  • Optional – If you want things even crunchier, you can add some iceberg-type lettuce to your sandwich.

  • Always use fresh ingredients for the best sandwiches. Using dried-out meats, stale bread and/or wilted vegetables will negatively impact the quality of your sandwiches.
  • You can always make a sandwich recipe even better by adding a “pinch” of your family’s favorite herbs & spices (such as cilantro, black pepper, red pepper flakes, rosemary, basil, etc.).
