Cranberry Chicken Salad Sandwich Recipe – Ingredients
- 1 1/2 Cups – Cooked Chicken Breast (Diced)
- 1/2 Cup – Celery (Sliced)
- 2 Tablespoons – Dried Cranberries
- 1/2 Cup – Mayonnaise
- 1/4 Teaspoon – Salt (optional)
- 1/4 Teaspoon – Black Pepper (optional)

- Prep Time – 10 minutes
- Cook Time – 10 minutes
- Fry up the chicken breast.
- Dice the cooked chicken into small chunks.
- Wash the celery.
- Slice the celery into small bits.
- Add chicken, celery and cranberries into a large bowl.
- Add the salt and black pepper.
- Mix in the mayonnaise with other ingredients.
- Spread resulting chicken salad onto your favorite homemade bread to make a great sandwich!

Tips – Cranberry Chicken Salad Sandwich
- Instead of cooking some chicken breast at home, you can also use some store bought oven roasted chicken or turkey.
- Add more mayonnaise to this recipe if you want a “creamier” (mayo-ier?) chicken salad.
- Don’t add hot (just cooked) chicken to the salad as it disrupts the mayonnaise. You want the cooked chicken to be chilled (refrigerator temperature) when making the chicken salad.
- Add this chicken salad to your favorite homemade bread recipe in order to make the perfect chicken salad sandwich. You can also experiment with different bread recipes (i.e. white bread, French bread, rolls and whole wheat bread) in order to create a large variety of great tasting chicken salad sandwiches.
- If you want things even crunchier, you can add some iceberg-type lettuce to your sandwich.
